One of the stable soups in Nigeria is the vegetable soup, vegetable soups are know for richness in protein , iron, vitamins and minerals. variety of vegetable soup exist in Nigeria, e.g water leaf&ugwu, uziza leaf ,okazi leaf etc.
- Wash and prepare ingredients
- Set cooking pot on medium heat
- Add a cooking spoon full of palm oil
- Pour in chopped onion and scotch bonnet allow to cook for 30secs
- Beef , offals ,
- Allow to cook , then add in seasonings after which you add in spinach systematically i.e allow each batch you pour in to the pot to simmer for few seconds before adding more spinach.allow to cook for five minutes or until spinach is properly cooked.
