Peppered Cowskin

This is a side dish or meat snack that can be eaten with any almost any main dish, rice, yam, plantain etc. It is very delicious and spicy and is most enjoyed with rice or by itself with a chilled drink.

  1. Wash the cowskin very thoroughly to remove sand and lose dirty skin, you can use salt to wash it, it helps remove the dirt.
  2. Cut the cowskin into small bite-sized pieces and rinse again.
  3. Put all the cut and cleaned cowskin in a pot and add some water, salt, blended onions, boullion cubes, a little curry and powdered pepper.
  4. Leave the cowskin to boil for 20 minutes and blend some pepper and onions roughly.
  5. Slice some onions and pour out the cowskin from the pot into a bowl, draining the stock out into another separate bowl.
  6. Heat up some vegetable oil, after about 5 minutes, pour in the drained cowskin to fry for 5 minutes
  7. Add the sliced onions and leave for 2 minutes
  8. Add the tomato paste and leave for another 3 minutes
  9. Pour in the roughly blended pepper and onion mix, add one boullion cube and salt. Stir and leave to fry for 5 minutes.
  10. Pour in the previously drained cowskin stock and stir. Leave to cook for 10 minutes and bring down from the stove.
  11. Serve hot as a side dish or by itself with a cold drink.
