Jollof rice is made with rice, pepper, onions, tomatoes cooked together in a pot. It is delicious and easy to make
- Blend pepper, tomatoes, onions, red bell pepper, shogun into a smooth paste and boil for 20minutes then set aside
- Measure and wash rice. Add little salt and wash with water to remove starch. Then set aside
- Place a clean pot on fire, add vegetable oil and sliced onions. Allow to fry till translucent then add tomatoes paste and allow to fry. Keep stirring
- Add the blended pepper mix. Add seasoning cubes, salt to taste, bay leaf, Benny, spicity, curry and thyme then stir together. Allow it to fry then add water that will be enough to cook the rice.
- After the water has boiled, add the washed rice. Stir together and cover with foil paper and pot cover. When the rice is soft and almost dry, add butter, sliced onions, Slice tomatoes and stir together.
- Reduce the heat to lowest and allow it to dry completely
- Serve with plantain and fish or meat
