Folding moi moi leaf

Calathea lutea. It is a green leaf commonly used to wrap food in Nigeria. It gives special flavour to the food as well as gives it a traditional look.

It is used to wrap such food as; cooked rice, moi moi, agidi, different types if swallow, ogiri among others.

  1. Soak the leave in room temperature salt water to kill germs for 5min

  2. Thoroughly rinse and lay on a flat surface to drain excess water out for 2-4min depending on amount of leaves washed.

  3. Start folding by taking it from the side as shown in the image

  4. Fold it over

  5. Continue folding till all the sides come together, then fold the tail up

  6. Gently put the bean paste inside

  7. Fold the top in gently to avoid spilling

  8. Completely fold it in
