Ewedu is a traditional soup in Nigeria (south west). It is also known as jute leaves. Ewedu can be served with buka stew and any swallow of your choice like Amala, Semo, pounded.
- Remove jute leaves ( ewedu) from the stalk and place on a bowl. Put water in a clean pot, add potash, place on the fire and allow it to boil till it bubbles
- Wash the ewedu (jute leaves) and add the ewedu to the water on the fire
- Allow it to cook for like 2minutes and check if it is soft
- Add locust beans
- Wash the small traditional broom (ijabe) and use the broom to blend the ewedu until it becomes smooth or use blender
- Add salt to taste and place pot of ewedu on fire for 1minute. Do not over cook.
- Serve the Ewedu with Buka stew and swallow of your choice
