Moi moi is a kind of food that can be enjoyed alone, and also as a side dish.
It is made with beans and it is highly proteinous.
It can be eaten as breakfast with akamu, Gaari, custard or bread.
It can be taken in the afternoon with white rice, jollof rice, jollof corn, fried rice etc.
It is also one of the parties side dishes.
- 2cups of well picked beans
- Wash the beans to rinse out the powder substance and soak for few minutes
- Peal the beans to remove the husk. Remove as much as you can to avoid dark coloured moi moi.
- Add onion and the pepper mix(atarodo, tatashe and shombo) remove the seed of the shombo to avoid slight bitter taste
- Grind to a smooth paste
- Add salt, maggi, curry, crayfish into the beans paste and mix
- Add 1.5 cup vegetable oil into it and mix well
- Gently fold the moi moi leaf and add the beans paste into it
- Place a po of water and fire. Line the inside with leaf, sticks or paper and allow to heat up
- Gently placed the wrap moi moi inside to cook for 1hr on medium-high flame,
- Cover and leave to cook. Pls cover with the pot lid
- Serve and enjoy
