This is a type of jollof rice but in which you don’t have all your complete ingredients so you just make do with what you have in your kitchen.
It tastes nice and simple with the right cooking method and you would enjoy is as much as you enjoy our conventional jollof rice.
- Wash and parboil the rice for 15 minutes, then take off the stove and wash again to reduce the starch content of the rice.
- Heat up the vegetable oil for 5 minutes and pour in the sliced onions, add the dry fish and stir fry for 2 minutes.
- Add the tomato paste, blended pepper and onions and fry for another 10 minutes.
- Add the boullion cubes, salt, curry and thyme, cover the pot and leave to simmer for 5 minutes.
- After 5 minutes, add the parboiled rice and add 2 cups of water. Stir and leave to boil for 30 minutes.
- After the water in the rice dries, take the pot down and serve hot with any drink of choice.
