Yamarita is a popular food of the Hausas in Northern Nigeria. It boiled yam coated with eggs, flour and spices and then fried.
- In a pot cook your yam till it's soft with salt and sugar (sugar is optional), pretty much cook the yam like how you eat it, the yam should be bulky .
- In a bowl measure in 1 cup of flour (it could be more depending on how much yam you're making), add salt, black pepper, suya spice, some garlic powder , mix this very well into the flour .
- In a bowl, break in 3 large eggs and whisk.
- Now you will dip the cooked yam into the eggs, then in flour, dip in the egg again and in the flour to properly coat the yam.
- then fry in very hot oil, till its golden brown. Repeat till you've fried all the yam.
- Now we could have easily just fry the yam, but we cook the yam first before frying so that the yam is crunchy on the outside but soft on the inside. Serve your yamarita with some pepper sauce or green sauce dip. I have a green sauce recipe on my profile check it out.
