Yam and egg sauce is one of the to go breakfast or lunch options in Nigeria . It is very budget friendly and easy to put together for you and your family.
- Peel your yam and cut into the size and shape you like and wash properly.
- Add some salt in water then introduce your washed yam, cover and cook till it's soft.
- Cut your chicken breast into small chunks.
- Season your chicken with some seasoning cubes, chicken spice .
- Add some vegetable oil in a pot introduce your chicken and fry for 8 minutes or till it's brown and nice.
- Take out the chicken and set aside.
- Add some more vegetable oil thing in with some onions, saute till it's translucent ,
- Go in with your chopped fresh tomatoes and blended pepper.
- Season with some seasoning cubes, curry powder, thyme . stir and cover to cook till the fresh tomatoes is properly cooked.
- Go in with the cooked chicken and stir. cover again to cook for 5 minutes.
- Then go in with your eggs mix and cover to cook till the eggs are combined and the eggs are lumpy.
- Serve with your yam and enjoy!
