- 50 Gram
- Scotch bonnet (ata rodo)
- 30 Gram
- Chopped onion/Minced garlic
- 20 Gram
- Vegetable oil
- 100 Gram
- Coconut milk
- 10 Gram
- Basil, oregano, parsley
- 10 Gram
- mozzarella cheese
- 1 Tablespoon
- salt/chicken seasoning
This is a pasta dish with a twist. It combines the creaminess of Italian pastas and the fieriness of Nigerian food. It is very tasty, unique and easy to make. It can also hold a long time in the fridge.
- 1. Parboil your penne pasta in slightly salted water till al dente and set aside.
- 2. In a non stick pan, heat up vegetable oil on medium heat.
- 3. Add your chopped onions and garlic and let release flavours
- 4. Add scotch bonnet paste (blended ata rodo) and fry thoroughly.
- 5, Season with curry, thyme, basil oregano, parsley, chicken seasoning and salt.
- 6. Add coconut milk and let cook for 3 minutes
- 7. Add parboiled pasta , mozzarella cheese, mix properly and let cook completely.
- 8. Serve immediately with any protein of choice
