- Roughly blended pepper mix ( scotch bonnet 60%, tomatoes 20%, onions 20%)
- 1 Liter
- Vegetable oil
- 1 Teaspoon
- 1 teaspoon seasoning and 1 teaspoon salt

A meal filled with so much taste and has a lot of health benefits. Plantain is high in fiber and Vitamin A which helps in battling sickness as well as Antioxidants, rice is a good carbohydrate for strength and Egg is rich in phosphorus, calcium, potassium
- Place a pot on fire add 2 cups of water or depending on the quality of rice you want to boil, wash ur eggs and add inside the water and start boiling
- Wash your rice and add to the boiling water, add, salt, cover up and allow to boil.
- In another pan, pour ur oil allow to get hot and add in onion saute it and pour in your pepper mix, add Seasoning and salt and allow to fry, do not cover so as for the water content to evaporate out.
- When your rice is boil, dice out your plantain into desired shape and place om the heat a pan, add oil allow to heat up and fry your plantain till golden brown.
- Remove your sauce when the oil separates from the sauce and when u can visibly see bubbles when you scoup with a spoon. Peel the eggs add them to the sauce or leave white depending on your choice. Serve your rice add your plantain and egg and your sauce and enjoy
