Red oil tomato stew and white rice

A Nigerian dish with a twist

  1. Cut up your fresh tomatoes and onions
  2. Prep your pepper and crayfish and other ingredients
  3. Put in 1 cup of groundnut oil and pour in your onions once the oil is hot
  4. Let the onions fry for some seconds the add your fresh tomatoes the add 1/2 cup of red oil let it fry for 10 minutes
  5. Add in your tin tomatoes let it fry for an additional 5 minutes
  6. Put in your crayfish pepper a cup of water and spices
  7. Cover and let it simmer for a minute
  8. Take down and boil your rice till done
  9. Serve and enjoy
