NKWOBI

NKWOBI Is a spicy Nigerian dish made from cow foot. It originates  from the Igbo tribe, located in the southeastern part of Nigeria. The dish is usually prepared with a cow’s leg that’s cooked in a thick, spicy sauce, but it can also be made with a combination of cow’s tail, goat meat, and chicken.

Now let’s proceed to the preparation method.

  1. Pour in cleaned and chopped cow foot in a pot and add some onions.

  2. Add in some seasoning and some salt

  3. Cover and allow to simmer in its own juice for about 7 minutes

  4. After 7 minutes, add more water to your protein and let it cook till really tender.

  5. In a separate pan, add in some palm oil.

  6. Add in some dissolved potash (akaun)

  7. Stir continuously until it thickens and changes to a bright orange color like this.

  8. Add in some traditional locust beans (ogiri)

  9. Add in some chopped onions, seasoning powder, crayfish, ground calabash nutmeg (ehuru) and salt to taste.

  10. Mix properly and add in some scotch bonnet for heat. Mix well

  11. Add in some fermented oil bean seed (ukpaka)

  12. Finally add in your cooked cow leg and stir to combine.
