Blend pepper,ginger ,garlic and set aside
Blend onions
Cut your vegetable leaf,I used ugwu
Whisk 6 eggs
Heat up palm oil mixed with vegetable oil
Stir in your blended onions and fry for 3 minutes
Stir in your pepper mix and fry for 5 minutes
Season with salt, stock cube, thyme,curry,dried basil leaves and cray fish,allow to fry for 3 minutes
Add your whisked egg and allow to fry till the egg is done
Once your egg is done,add your vegetable
Mix properly and allow it simmer for a minute..Your egg sauce is ready.
Serve and enjoy with any carb of your choice
