Low budget fried vegetable soup

This vegetable soup is made with Pumpkin leaf; that is “Ugwu”. It’s a more common way of making vegetable soup in the east side of Nigeria. Here’s how to make ugu

  1. Pick ugwu leaves and cut
  2. Wash with warm water and drain water using seive
  3. Wash panla fish and set aside
  4. Put a pot on the fire and add groundnut oil
  5. Pour your sliced onion into the hot oil and fry for a minute. Add you ginger and garlic paste as well
  6. Add you sliced pepper into the pot along with your washed panla fish and let it simmer for 2minutes
  7. After two minutes, add grounded crayfish, seasoning cubes and salt to desired taste then stir
  8. Add your drained washed ugwu and stir together. Let it simmer for 2minutes
  9. Turn off the heat and serve with rice or yam
