Heat up oil,when hot,add onions and tomatoe paste, blender pepper and stirfry for 1min on low heat till oil floats,increase heat to med, add 2Cups of water,onga seasonings,Curry thyme, Black Pepper, knorr and bay leave bring to boil.
Now,add rice,reduce flame to low/med,bring to boil.
When water dries,if it's soft and done, remove from heat or,you drizzle lil more water to soften it to your taste and cover with shiny part of foil paper till soft,this may take Max 15mins, depending on rice type.
When soft,add spring onions,stir properly with a cooking spoon.
Peel and slice plantains to your desire shapes. Add oil in a pan ,add little salt and put on heat. When oil is heated, arrange cut plantain in the oil. Fry for about 5 minutes on medium heat or till golden brown then turn to fry the other side. Transfer to a bowl.
