Grilled fish is a very delicious fish option other than fried fish. It is enjoyed all over the world and it is not so difficult to make . Let’s get cooking…
- you'll be need atarodo, tatashe (bell peppers)
- Wash and prep your fish of choice for this recipe I'm using croaker fish. cut the side of the fish and take out the stomach of the fish and wash till it's nice and clean.
- mix your curry masala , barbecue sauce , all purpose seasoning and some salt in a bowl
- In your blender, go in with onions, ginger, garlic onions,atarodo, shombo and then some vegetable oil.
- Blend into a smooth paste and then turn it into a bowl., season the sauce very well cos you want your fish to be very sweet and not bland.
- cut incisions into the fish so that the marinade will seep into all parts of the fish thereby making it sweet, Do it in both sides.
- Introduce the marinade into the body of the fish through the open parts.
- Then marinate the body of the fish on both sides. then add your chopped carrots, onions and other vegetables you're using.
- This is basically for extra flavours to seep into the fish.
- Now wrap it up in 2 layers of foil, don't wrap it up too tightly incase you need to to open it up to check if it's cooked and to re add the marinade to the fish.
- Now in your outdoor grill or oven grill toss in your fish to grill for 15-25 minutes. check your fish at intervals don't jus put it in the grill and abandon it ,check at intervals.
- Take it out of the oven, you can serve the fish with French fries, fried plantain and pepper sauce
