Ewedu soup

Ewedu is mostly eaten by the yorubas but it is also appreciated by other ethnic groups .

  1. Pick the leaves of the ewedu and wash with enough water to remove sand and dirts. Add water to a cooking pot and add 1tsp of potash, cover the pot and let the water boil. Once the potash has dissolved, add the washes ewedu leaves and cook for about 15mins. After 15mins, the leaves should be soft, whisk with a local short broom( for this purpose) or blend with a blender. After whisking, add a pinch of salt, seasoning cube and let it simmer for about a minute. Remove from fire and serve with stew and amala.
