This is a popular Nigerian soup commonly eaten as lunch or dinner with any swallow of choice.
It is tasty, easy to make, and there are a myriad of ways to make it, but this is my go to method.
Fun fact: Egusi improves memory. So, eat more of egusi soup😁
- Thoroughly clean and boil your meat. For this recipe I'm using beef and cow skin (ponmo). I seasoned with salt, seasoning cubes, Cameroon pepper and onions
- Wash and blend your pepper and onions. You can add a bit of tomatoes (I added two medium sized ones)
- Finely chop a medium (or whatever your preference is) sized onions and set aside
- Pour the ground egusi into a bowl, add a bit of the onions, a little water and make a thick paste. Set aside
- Wash and slice your vegetables
- Clean the smoked fish
- Set your stove on medium heat, place your cooking pot and allow to heat up slightly
- Pour in your oil and leave for about 20secs
- When hot, pour in the chopped onions and saute for about 30secs
- Pour in the pepper blend and cook for 5-7 minutes
- Add the smoked fish and cook for about 5 more minutes
- Add the egusi paste in small portions and cook for 10 minutes before stirring
- Add the meat stock and 1.5 cups of water and allow to cook for 5 minutes
- Add the rest of your protein and some crayfish powder and cook for 10 minutes
- Add the vegetables, cook for 2 minutes
- Turn off the heat and serve with any swallow (eba, pound, semo etc) of choice
