Dirty rice is a traditional Louisiana Creole dish made from white rice which gets a “dirty” color from being cooked with small pieces of pork, beef or chicken.
- In a pot add some coconut oil or vegetable oil of choice, add some chopped onions, minced garlic and sorte for a few seconds. add some thyme, rosemary, basil and parsley, stir for a few seconds.
- then add in your minced beef and fry till the vegetable oil floats.
- then add your washed rice ,some curry, and suya spice. Stir till the rice is well combined till it looks brownish.
- Add some stock water and a little bit of clean water ,seasoning properly to taste and cover up to cook.
- Check your rice at intervals to see if its properly cooked, lift and turn turn.
- Cover to cook till it's 99% cooked, then add some spring onions and green bell pepper, allow to cook for 4 mins.
- mix gently and your dirty rice is ready!!. Serve and enjoy.
