Boiled plantain with vegetable fish sauce

A very easy and healthy meal,which can be served for lunch and dinner.

  1. Wash your plantain with the skin,cut and boil
  2. Dress your Titus fish(mackerel) ,cut, spice it with salt , pepper,stock cube and boil
  3. Cut your vegetable leaf,I used ugwu leaf.
  4. Once your fish is ready, shred it and set aside
  5. Heat up your vegetable oil, stir in onions and blended pepper and let it simmer for 2 minutes.
  6. Spice it up and add your shredded fish,and let it simmer for 2 minutes
  7. Add your vegetable and let it simmer for 2 minutes, so that the vegetable will still be fresh.
  8. Serve with your boiled plantain and enjoy
