- 1/2 cup of diced carrots
- 1 Cup
- 1cup of sliced coloured bell peppers
- 1 Cup
- 1 onion
- 1 Cup
- Blended tomato and pepper
- 2 Tablespoon
- Curry and thyme
- 2 Tablespoon
- Seasoning
- 1 Teaspoon
- Salt
- 1 Tablespoon
- Bay leaf
In a pot add you chopped beef and some seasoning powder, fry till it’s properly cooked and take off the heat .
Add the chopped onion, chopped garlic and tomato mix, fry till it’s properly cooked, add spice mix ( curry, thyme)and the seasoning powder, some salt and give it a good mix.
After 2 minutes add the bay leaf, parboiled rice and meat stock and allow to cook for 20 minutes on low heat .
Once the rice is properly cooked add the fried beef, chopped carrot and bell peppers and chopped onion , cook for 2 minutes and your rice is ready
- In a pot, add chopped beef seasoning powder and fry
- Take it off the heat and add chopped garlic, onion and some vegetable oil and tomato mix and fry for 5minutes
- Add seasoning powder, spice mix, salt and bay leaf
- Cook for 2 minutes, then add the parboiled rice and meat stock, cook on low heat file 20 minutes
- Once the rice is cooked, add chopped carrot, onion and bell peppers
- Your beef jollof is ready
