Yam and Egg sauce

Yam and Egg is a food eaten at any meal time i.e it can be eaten as a breakfast, lunch or dinner.

Yam itself is rich in fibre and carbohydrates and so digest easily and also improves energy.

Egg on the other hand is rich in protein and more nutritious when cooked with fat,  fruits and vegetables. This makes this food a well balanced diet that is good for the body.

  1. Peel yam and cut into desired sizes, wash to remove dirth

  2. Add yam into a pot of boiling water, add a teaspoon of salt, cook until soft and tender

  3. Take tomatoes, pepper, onion and 2small garlic and roughly blend it together

  4. Place a pot of oil on the stove and let it heat up

  5. Add crushed garlic and sliced onion into it and let it fry few secs

  6. Add the blended pepper mix, salt, and stock cube into it and let it fry for 2min

  7. Break 7eggs into a bowl, add salt and whisk well, add it into the cooking sauce and mix well to combine.

  8. Allow to cook for 2 min while stirring occasionally to avoid burning
