White Rice With Local Palm Oil Stew
  1. In a clean bowl pour in your tomatoes, fresh pepper, bell pepper, onions, wash properly, after that transfer into a clean pot and place in the fire to steam for 5 minutes. In a blender pour in your steamed tomatoes, fresh pepper, bell pepper and onions and blend properly to be smooth, after blending set aside.
  2. Steam the stockfish, smoked catfish, fresh fish after 6 minutes remove the fresh fish so it doesn't scatter and set aside then allow the stockfish and smoked catfish to boil for 10 minutes. Also in a separate pot cook your eggs, and set aside. Then fry the fish and de-bone and set aside also
  3. Place a clean pot on the stove to heat then pour the palm oil into the pot, set on a medium heat. When the oil has heat up, add the 2 chopped onions and saute for 2 minutes. After 2 minutes then add the blended tomatoes, fresh pepper, bell pepper and onions into the pot and steer for 10 minutes. After steering for 10 minutes, add the knorr cubes, salt, curry powder, thyme and crayfish to taste, allow it to fry on a medium heat for 20 minutes, make sure you steer it with a spatula to avoid burning, so steer after every 5 minutes.
  4. After 20 minutes, add the stockfish, smoked catfish, the peeled eggs to the stew and the stockfish broth too. Reduce the stove to a low heat, and allow to fry for 35 minutes because the more you fry the stew the more it becomes tastier, that's the magic. Steer continuously to avoid burning. After 35 minutes the palm oil stew is awesomely ready to be eaten with that basmati rice
  5. Place a clean pot filled with clean water on the stove to be heating. In a clean bowl pour in your rice and 2tsp of salt and wash with water and drained with a filter. Pour the rice into the boiling water and parboiled for 10 minutes.
  6. After 10 minutes drain the rice into a filter and rinse with water, return the pot back to the stove, add salt, groundnut oil and some sliced of onions and allow the water to boil for 5 minutes. After 5 minutes pour in your rice into the boiling water, cover the pot and let it cook for 20 minutes, after 20 minutes check to see if the rice is soft, if it is soft drained the rice into a filter and return back into the pot and place the pot back on the stove on a very low heat after 1 minutes, you put the stove off.
  7. Serve rice with stew
