The Nigerian White Rice and beans with Stew is a popular Nigerian recipe because it lets you eat rice and beans with any stew or sauce of your choice. This recipe is usually eaten with Egg, Beef, fish, chicken etc.
- 1. Boil your picked, rinsed beans first, then when it's almost done(not too soft or hard) add the rice into it with salt until it is cooked and dry.
- 2. Season meat properly to get the stock.
- 3. When it is cooked, you could fry or grill the meat if you like.
- 4. Pour the vegetable oil/ palm oil into a pot and place on heat.
- 5. Throw in the chopped onions, ginger, crushed garlic, curry and thyme when the oil is hot(I like using vegetable oil and palm oil little of each together).
- 6. Pour the blended pepper mix into the pot and allow to cook for about 10mins.
- 7. Pour in the stock, boiled eggs and cook further.
- 8. Add the seasoning cube.
- 9. Cook for another 20mins.
- 10. Add the meat and salt to taste. Set aside and dish your meal, dinner is ready.
