Egusi seed is a rich source of protein and omega-6 fatty acids. Similar to most plant oils, it mainly contains unsaturated fatty acids. Its seed oil is a good source of natural antioxidants like vitamin E and ß-carotene.
Egusi seed is a good source of potassium and calcium, minerals that regulate blood pressure. It is also a rich source of magnesium, phosphorus, iron and zinc.
- Grind 2 cups of dry Egusi seed
- Grind onion and pepper mix
- Add the Egusi into a pot and place on medium high heat to cook for 10 min until the water dries (note- stir consistently to avoid it sticking to the bottom of the pot and burning)
- Add the blended pepper mix into the egusi
- Add palm oil and stir to combine, let it cook for another 10 min
- After 10min, add dry fish, precooked meat and ponmo along with it's stock, add salt to taste and maggi if necessary and allow to cook for 8min
- Add prewashed water leaf and ugu leaf stir it in and allow to cook for 2min
- Serve and enjoy
