On some days, you’re low on cash but still need to eat healthy. This recipe ticks the boxes for super healthy and nutritious, delicious, and pocket friendly (with 500-700 naira, you’re set for three meal times).
It is very easy to make and anyone can easily recreate this.
Let’s get started.
- Wash and slice the tomatoes, pepper, and onions
- Thoroughly wash the vegetables and slice
- Clean the smoked fish
- Set your stove on medium heat, put your pan on and heat up some palm oil
- When the oil is hot (please do not bleach) pour in the onions and saute for about 30secs
- Add the tomatoes and pepper and cook for about 3 minutes
- Add the fish and one seasoning cube and allow to cook for a few minutes
- Add salt to taste and pour in the chopped vegetables
- I usually do not stir at this point, instead I cover the pot and allow to wilt for a minute or two. This way, it is much easier to stir
- After a minute or two stir and turn off the heat. Your vegetable sauce is ready to be served
- I paired the sauce with some white rice and all you have to do is wash up some rice, transfer to a pot of boiling water. The water should just be slightly above the rice. Season with a little salt and let it cook on low heat for about 15minutes
- Take off the heat when the water is dried up and serve
