African breadfruit (ukwa) is definitely one of the popular foods in Nigeria, it is a well-known delicacy in Igboland.
- Get your Ukwa in a bowl big enough to wash it in.
- Wash the Ukwa severally with warm water to get rid of dirt and sand, sieve in between.
- When it is sure that the Ukwa is clean and free of stones and sand. Get it into a pot, with enough water to cover the Ukwa. When it boils, add your potash ( dissolve potash in one cup of water and the clean filtered water from it ) Ukwa can not get soft without the potash.
- Cook till it’s soft, then proceed to add your seasoning cubes, blended or chopped pepper, salt and red oil. Taste for salt and cook for an extra 2 minutes and your Ukwa is ready to be served.
