Ukwa A.k.a African breadfruit

African breadfruit (ukwa) is definitely one of the popular foods in Nigeria, it is a well-known delicacy in Igboland.

  1. Get your Ukwa in a bowl big enough to wash it in.

  2. Wash the Ukwa severally with warm water to get rid of dirt and sand, sieve in between.
  3. When it is sure that the Ukwa is clean and free of stones and sand. Get it into a pot, with enough water to cover the Ukwa. When it boils, add your potash ( dissolve potash in one cup of water and the clean filtered water from it ) Ukwa can not get soft without the potash.
  4. Cook till it’s soft, then proceed to add your seasoning cubes, blended or chopped pepper, salt and red oil. Taste for salt and cook for an extra 2 minutes and your Ukwa is ready to be served.
