Tigernut milk is also known as kunun Aya. It’s a nutritious drink from northern Nigeria. It’s something enjoyed by all
- Wash the dried tigernut and soak for at least a hour or more
- Break the coconut and remove the flesh then set aside
- Peel the ginger and set aside
- After a hour or more, put the coconut, tigernut, fresh ginger into the blender
- Add in some ice cubes and water and blend everything together
- After blending, sieve it and drain the milk
- Put the milk in an airtight container and store in the fridge
- The kunun Aya can last up to 3 days in the fridge
