Yam is a tuber that is consumed in Africa, especially Nigeria. It can be taken with palm oil, beans, stew etc but here it is prepared with egg sauce.
- Slice and peel your yam.
- Wash thoroughly and transfer to a pot
- Add a pinch of salt and allow to boil.
- Crack the eggs and whisk
- Slice the vegetables (tomatoes, pepper, carrot, spring onion)
- Put a frying pan on the gas, when the water has dried add vegetable oil
- Add onion first, then the tomatoes and peppers and allow to fry for 5 while constantly stirring
- Add the carrots and spring onion then add seasoning and salt and leave for 2 more minutes
- Add the whisked egg and stir until the egg is well cooked
- Check the yam for softness, if soft, bring it down and serve with the egg sauce
