Sliced yam with egg sauce

Yam is a tuber that is consumed in Africa, especially Nigeria. It can be taken with palm oil, beans, stew etc but here it is prepared with egg sauce.

  1. Slice and peel your yam.
  2. Wash thoroughly and transfer to a pot
  3. Add a pinch of salt and allow to boil.
  4. Crack the eggs and whisk
  5. Slice the vegetables (tomatoes, pepper, carrot, spring onion)
  6. Put a frying pan on the gas, when the water has dried add vegetable oil
  7. Add onion first, then the tomatoes and peppers and allow to fry for 5 while constantly stirring
  8. Add the carrots and spring onion then add seasoning and salt and leave for 2 more minutes
  9. Add the whisked egg and stir until the egg is well cooked
  10. Check the yam for softness, if soft, bring it down and serve with the egg sauce
