Fried rice is a cooked rice that requires been stir fry in a pan and it is usually mixed with ingredients such as shredded chicken, liver, eggs, vegetables like bell peppers, spring onions etc. it is eaten with either salad or moi moi. Most people believe that it can only be eaten during occasional time like wedding, birthdays etc due to it’s unique appearance and taste but fun fact is that it is meant to be cooked or eaten at any time
- In a clean bowl add your rice and wash with thoroughly to remove sand particles from it then set aside
- Place a pot on a medium heat, add your vegetable oil and two spoons of margarine. When the hot has heat up then add in the washed rice and fry for 5 minutes. Make sure to stir at every interval. After frying add in the chicken stock to the stirred rice, Add enough that will be enough to cook through and taste for seasonings. Then cover with a foil paper to cook for 20 minutes
- Wash your vegetables (green peas, runner beans, carrots, sweet corn,bell peppers, bouillon pepper, onion, spring onions, cabbage) thoroughly to remove sand and dice all of them separately in a bowl and keep aside.
- Break four eggs in a plate, and keep aside, dice the liver and chicken and keep aside
- Place your pan in a medium heat, add 3 tablespoon of ground nut oil to the hot pan and allow to heat then pour in your whisked egg to it and stir fry for two minutes then place it in a bowl and set aside, add your desirable quantity of groundnut oil to the pan allow to heat. Then pour in the liver and allow it to dry. Add your vegetables to the pan and stir fry in a medium heat for 7 minutes. Add in your desirable quantity of salt, bouillon cubes, black pepper, curry, thyme, sour sauce and stir fry for 5 minutes
- Check the rice if it has soft then bring it out from the heat. Add in your mixed stir fry veggies to the rice and combine together then place back on a medium heat for 3 minutes then add the scrambled eggs and your shredded chicken to the rice
- Fried rice is ready and to be paired with your desirable protein
