Pounded yam with egusi soup is a Nigerian dish eaten mostly in the western region, it taste is so delightful and it so satisfying.
- 1. Peel, rinse and boil your yam.
- 2. Using a mortar and pestle pound the yam till soft and stretchy, sprinkling the yam water at intervals, you can also use a food processor.
- 3. Mould into desired shape and size. Keep aside.
- 4. For the soup, Mix the egusi with water to form a paste.
- 5. Add your palm oil into the pot and fry the grinded pepper mix for 5mins, add the egusi mix gradually in ball.
- 6. Add your water, salt, ponmo, fried meat and seasoning.
- 7. Allow to cook, add in the cray fish cook for 5 more mins then finally add sliced spinach.
- 8. Allow it to steam for 5 mins. Ready to serve for lunch.
