Dice your potatoes to tiny cube
In a pot add water and the potatoes and bring to a boil
Once the potatoes is in the pot add your desired spices for taste
Once the potatoes are soft, strain the water out
Chop your fresh pepper to your desired shape
In a pan add little groundnut oil (it depends on your taste)
Add the onions to the heated oil and put your spices
After 1 minute add the chopped fresh pepper and fry for a bit
Add tomato paste (optional) and bring to a fry
After that add the geisha or mackerel tomatoes sauce to the pan and bring to a boil
You can add a little more oil and some spices depending on your taste
Boil for 3 mins while stirring then set it aside
In a bowl place your sausage and your spices to it
Heat little oil in a pan and fry the sausage till firm and golden
Dice the sausage into tiny cubes
In a plate add the boiled potatoes, sauce and sausage together
