Plantain frittata

Plantain frittata is a continental dish made with fried plantain, egg and vegetables. It is rich in proteins, vitamins and minerals. It can be eaten as a dessert.

  1. Cut the plantain into round shape and fry
  2. Cut the vegetables into tiny cubes and set aside
  3. Fry the vegetables with little oil, spice with Maggi, salt, pepper, mixed spice, ginger and garlic
  4. Cut your meat into tiny cubes, fry and set aside
  5. In a bowl, add your flour mix with water, break in your eggs, add the fried vegetables and spice up with necessary ingredients
  6. Whisk together and pour in a non-stick frying pan and fastly arrange the fried plantain on the mixture
  7. Cook on a very low heat until lightly brown, flip the other side and finish the cooking
  8. Finally flip to a round plate, dish out and serve with chilled drink
