- Plantain
Plantain frittata is a continental dish made with fried plantain, egg and vegetables. It is rich in proteins, vitamins and minerals. It can be eaten as a dessert.
- Cut the plantain into round shape and fry
- Cut the vegetables into tiny cubes and set aside
- Fry the vegetables with little oil, spice with Maggi, salt, pepper, mixed spice, ginger and garlic
- Cut your meat into tiny cubes, fry and set aside
- In a bowl, add your flour mix with water, break in your eggs, add the fried vegetables and spice up with necessary ingredients
- Whisk together and pour in a non-stick frying pan and fastly arrange the fried plantain on the mixture
- Cook on a very low heat until lightly brown, flip the other side and finish the cooking
- Finally flip to a round plate, dish out and serve with chilled drink
