Start by cooking your protein (I used beef meat) and seasoned very well and until tender, fry it and set aside.
Parboil your rice then wash it and keep it aside.
In a pot put fry your palm oil with onion, then add in your pepper mix and fry for like 5 minutes, you can add your seasonings and spices at this step or later, add crayfish powder , add your rice and stir very well, add meat broth if available or add water then close it.
Wash and cut your ugu leaves or spinach, when the rice is in 5 minutes to be done, add in your spinach. Cover and let it finish cooking
Cut plantain in cubes and fry it,
Serve the rice in a bowl or plate, add the fried plantain and meat. Tadaaa
