Nigerian stew is a flavorful and spicy tomato-based sauce that is a staple in Nigerian cuisine. It typically includes ingredients such as tomatoes, onions, peppers, and a variety of meats or seafood. It is often served with rice, yams, or other starchy sides.
- Add in tomatoes, bell peppers, chilli peppers and scotch bonnets in a pot.
- Cover and transfer to a stove top. Let it simmer until all the juice from the combination dries up.
- When it looks like this, take out and blend into a smooth paste.
- In a clean pot, add in some oil and some onions.
- Add in some ginger and garlic paste or powder
- Add some curry and thyme and fry the combo in the oil until flavorful
- Add some tomato paste and fry for 5 minutes or until it starts browning
- Pour in your blended tomato/pepper mix
- Cover to cook for a few 7 minutes
- After 7 minutes, open and add in some meat stock.
- Add some salt and seasoning to taste
- Add some mixed spices for extra taste and flavor
- Stir everything carefully to combine
- Cover and let it fry on low heat for about 10 minutes or until the oil comes afloat.
- If it looks like this, then you know it’s properly fried.
- Add in whatever protein of your choice into the pot of stew and stir it properly..
- Cover it and cook on very low heat for about 4 minutes so the protein can release its flavor into the stew
- Enjoy with rice, Yam, potatoes or even bread.
