Nigerian fried rice is like every fried rice except with the use of curry for it’s distinct yellow/greenish colour .
- In a pan add some vegetable oil and onions and stir fry for 1 minutes. Go in with your washed rice, stir fry for about 5 minutes add one seasoning cube.
- Then go in with your meat stock. I'll advise you use goat meat stock, it has the best flavour .
- Cook the rice in the stock till its perfectly dried. The essence of the curry is to give the rice that Naija fried rice signature colour.
- Set the rice aside, in a pot melt some butter, go in with your chopped bell peppers, carrots and stir fry on medium heat for 3 minutes.
- Add some sausages and sweet corn too if you like and stir fry for 2 minutes
- Go in with the rice and combine the vegetables with the rice ,stir fry for 5 minutes and your Nail fried rice is ready!
- Serve hot and Enjoy!
