Nigerian Coconut Rice is a delicious and fragrant dish,you can add any protein or vegetables to it but this recipe is for when you don’t have the luxury for all that .lol .enjoy
- Break your coconut ,make sure to get very strong ones,they have sweeter milk....if this is too hard for you please buy your coconut milk,I prefer to make mine.
- Cut into small chunks
- Blend and pour into a pot or a stainless bowl
- Heat the blended coconut on fire,so that the milk can really come out
- Sieve the milk
- Your coconut milk is ready
- Heat up coconut oil and stir in your onion
- Add in your coconut milk and stir
- Add in your salt,dry pepper
- Add your stock cube and crayfish and stir
- Add your already washed rice
- Stir ,add water and cook till soft
- Your coconut rice is ready
- Serve and enjoy with any protein of your choice
