A simple and local way of preparing jollof rice. This is more earthy and delicious compare to the normal jollof rice. Try this recipe out and I can guarantee you a 💯 satisfaction
- Slice the onions and roughly blend the scotch bonnet
- Scrap and wash the Ponmo with water and salt thoroughly
- Debone the smoked panla and rinse
- Put the palm oil on fire and add in the sliced onions
- Saute the onions for a minute
- Add in the washed Ponmo and smoked panla and fry for 3 minutes
- After 3 minutes, add in the scotch bonnet pepper, salt, blended crayfish and fry for 5 minutes
- Now, add in the washed rice and fry with the sauce for 5 minutes
- After the 5 minutes, you will add in water and cook on low to medium heat for 30 minutes
- Your delicious local rice is ready
