Coconut rice is a Nigerian dish bursting with coconut flavours and other spices. this rice is a must try and it is also a great option for parties and in restaurants. In my opinion this rice is underrated.
- Cook your protein, with pepper, onions, seasoning and set aside. In a mother pot go in with some coconut oil, add some chopped onions and blended pepper , go in with some coconut essence and saute for 2 minutes.
- Go in with your wash raw rice and stir fry for 5 minutes.
- Then go in with some coconut milk and your protein broth.
- Give that a good mix then cover to cook till the rice is dry.
- In another pan, go in with coconut oil, add some chopped onions saute for a minute, then go in with your cooked protein.
- Fry that for 5 minutes then go in with some chopped , bell peppers, carrots and sausages, Season with some seasoning cubes and fry that for about 3 minutes.
- Go in with your rice and mix to combine, and the best coconut rice ever is ready! Serve and enjoy!
