Jollof Rice

  1. Parboil the Rice: - Wash the rice in cold water until the water runs clear. - In a large pot, add the rice and enough water to cover it. Parboil for about 10 minutes until it's partially cooked. You want it to be firm but not fully cooked. Drain and set aside.
  2. Prepare the Sauce: - In a separate pot, heat the vegetable oil over medium heat. - Add chopped onions and sauté until they become translucent. - Add the minced garlic and ginger, and cook for another minute. - Stir in the tomato sauce or blended tomatoes, and cook for about 10-15 minutes until the oil starts to separate from the tomato sauce.
