Ikokore is a traditional meal of ijebu people, which is made with wateryam & made with different protein, TITUS FISH, SMOKED HAKE, BONGA FISH, TRIPE (saki) BEEF, MEDIUM SIZE CRAYFISH & PONMO IJEBU
- Season your beef, titus fish, smoked hake and ponmo and let it cook
- Blend some red bell pepper, scotch bonnet and tomatoes & onions and set it aside
- Once ur boiled meat & ponmo is ready , cut into smaller pieces
- Get your bonga fish carefully debone it, debone the smoked hake and the Titus fish, and for the crayfish carefully cut out the sharp head and black eyes out and set aside
- Get your wateryam, and peel, and cut into a comfortable size for grating, use the smaller hole on your grater because we want a very smooth texture
- Rinse the water yam, and grate, add some salt, seasoning and powder pepper to taste and give a good mix with your hands
- Pour in a generous amount of palmoil into the pot, add the pepper mix , add some salt, some seasoning, some powder crayfish and give it a good mix ,after 2minutes add in all ur proteins, and add 2cups of water and let it boil
- Once it’s boiling, scoop out all ur protein and set aside,
- Scoop your water yam into small size like you are frying puffpuff, and drop each balls into the boiling sauce carefully,
- Then pour in ur protein on top and let it boil on low heat for 15-20minute, do not turn like eba , just carefully use a wooden spoon to check
