  1. In a pan, heat a small amount of cooking oil over medium heat.
  2. Add the minced garlic and chopped red onion to the pan. Sauté until they become fragrant and the onion turns translucent.
  3. Add the diced tomato to the pan and cook until it softens and releases its juices.
  4. Stir in the curry powder, knorr seasoning cubeand salt. Mix well with the onion and tomato mixture.
  5. Add the diced Irish potatoes, carrot, and green peas to the pan. Stir to coat them with the spice mixture.
  6. Pour in enough water to cover the vegetables. Bring the mixture to a boil, then reduce the heat to low and cover the pan. Let it simmer until the potatoes and carrots become tender. Add more water if needed to maintain the desired consistency of the curry.
  7. Once the vegetables are cooked, add the cooked guinea corn to the pan. Stir gently to combine all the ingredients.
  8. Allow the curry to simmer for a few more minutes to let the flavors meld together.
  9. Stir in the chopped celery leaves towards the end of cooking.
  10. Taste and adjust the seasoning if necessary.
