Fufu (Akpu)
  1. Peel and dice the cassava
  2. Wash the cassava thoroughly
  3. Put in a pot and add enough water to soak it
  4. Then add in the Baking soda and cover for 3 days
  5. The cassava should be soft enough after 3 days
  6. Strain the water then grind with an industrial blender
  7. Remove any fibre you see with your hand
  8. Sieve the paste with a cheese cloth till all the excess water is removed
  9. Then place the fufu in a pot, add boiling water and mix till a paste is form
  10. Stir with a wooden spoon. Add in extra water if necessary
  11. Stir continually till the fufu turns into an off white color
  12. Your fufu is ready to be eaten
