Firstly, start with washing your Cow head, because this takes time to cook. Add some seasoning to your cow head and leave to cook until tender. On a different burner, wash your coco yams to remove the sand then put them in a pot to boil until it’s very soft and easy to blend. (I use a blender but you can decide to pound it)
After about 40mins into cooking the cow head come back to check if it’s chewable or almost soft, add your beef and other proteins into the pot and cook all together. Meanwhile don’t forget the coco yam in the other pot that’s cooking, by this time it should be ready and soft enough for the blender. Take it down, and start peeling out the coco yams!!! Please don’t deep your hands into the hot water pot of coco yam else your hands will get burnt. Pour out the hot water and use cold water to cool it then start blending.
After you have completely peeled out the coco yams, but smaller batches into your blender and blend till it’s smooth to a paste and set aside.
Once your Coco yam is ready now you can start the soup preparation. What’s next is our stockfish, boil water to wash your stock fish up before you add them to the cooking pot of cow head and beef.
Once you have washed your stockfish you can add your ground crayfish, peppers, seasoning cubes, then unwrap your Ogiri, using your spatula to rub it against the walls of the pot. Cover your pot and leave it to simmer.
After 7 minutes, your Cocoyam will be filled with excitement to be in the pot too so you use a spoon and add it gradually into the pot so it has enough room to dissolve into your juicy meat stock😋. Once you have completely added the coco yam, add the palm oil and cover your pot, leave it to cook until it’s completely dissolved. While this is cooking start tearing the oha leaves using your fingers and not knives (Oha leaves are so soft and easy to tear).
Once you have noticed the coco Yams have dissolved, you can add your kpanla smoked fish or any other smoked fish but I love the kpanla fish. Leave to cook for 2 minutes. I like to add my fish before the veggies so it don’t get lost inside the soup.
After that is cooked, add your already washed Oha Leaves… cover your pot and allow the soup boil for 3 to 5minutes. Add water if it’s too thick and don’t forget to taste for salt.
Your Finger Licking Oha soup is ready and best served with fufu or any swallow of your choice! Don’t forget to add a chilled bottle of your favorite drink 🍹
