Egusi is a common soup in Nigeria. This soup has varieties of recipe from different parts of country. This recipe is easy and delicious.
- Roughly blend the tomatoes, scotch bonnet, and onions
- Wash and your chop your ugu
- Wash the locust beans
- Put a pot on fire and add In palm oil and allow it to bleach Alittle
- Then youll add in your roughly blended scotch bonnet, tomatoes and onions and mix together and stir
- After 10 minutes, add in the locust beans, salt and seasoning cubes
- Allow this to fry for 5 minutes
- Add in water, and cover till it boils
- Add in the Egusi and stir together
- After 5 minutes, add in your ugu (spinach) leaves and cover for 3 minutes
- After 3 minutes, you should put off the gas flame ...your Egusi is ready.
