Egusi Soup is one of the delicious soup which is most popular in Nigeria, the soup can be prepared in various ways, be it fried or non-fried,it will always come out great.
- Start by washing your beef and beef tripe very well, put into a pot and season well with onions,3 seasoning cubes and salt, put on fire to steam out it's own water before adding a little water to enable the meat cook well.
- Grind your Egusi seeds and cut your ugu and uziza leaves,set them aside.
- Add your washed stockfish,ponmo and smoked fish to the pot when the meat becomes tender, cover the pot to cook for 5 minutes.
- Add 3 big spoons of palm oil to the pot, allow to cook for 2 minutes.
- Add small water and onions to the ground egusi and mix well before adding to the pot, one small spoon at a time. Cover pot and allow to cook for 5 minutes.
- Add your ground crayfish,ogiri okpei and scotch bonnet pepper to the pot,add your seasoning cubes and salt to taste.
- Put the shredded uziza leaves and cover to cook for about 15-20 minutes.
- Then add the shredded ugu leaves lastly, taste for salt and allow to cook for 1 minute, put off fire.
- Your non-fried Egusi Soup is ready, enjoy with any pairing of your choice.
