- 1 Tablespoon
- Salt
- 5 Gram
- Stock cube
- 4 Cup
- Palm oil
Nigerian Egusi Soup is a soup thickened with ground melon seeds and contains leafy vegetables. It is one of the most popular soups prepared by most tribes in Nigeria with considerable variation and often eaten with dishes like Pounded Yam, fufu,eba.
- Blend pepper and onions
- Wash and cut your meat into desired size
- Wash and cut your ponmo(cow skin)
- Put your meat and ponmo in a pot,spice with 1tbsp of salt, blended pepper and 5 stock cube
- Add water and cook untill soft
- Wash periwinkle (optional)
- Grind your Egusi (melon seed)
- Once your protein is ready,sieve out the broth and set aside
- Add the meat broth Into the blended Egusi and mix thoroughly
- Heat up palm oil
- Add in your blended pepper and onions
- Stir and let it fry for 3 minutes
- Add in your periwinkle,stir and let it fry for 5 minutes
- Stir in your protein
- Allow to fry for 5 minutes
- Add in your crayfish and stir,add a little water for a lighter consistency
- Add your egusi
- Mix and let it fry till it's perfectly cooked
- Keep stiring untill it looks like this(then it is cooked)
- Add in your vegetable (ugwu leaf)
- Stir in and cook for 2 minutes..your soup is ready!!!
