Egusi peppersoup is a traditional dish of the Urhobos in Delta State, Nigeria.
It’s made from toasted melon, locally sourced spices and seasonings and proteins of one’s preference ( mine is snails, shrimps and catfish).
Egusi peppersoup is not just tasty but very interesting too. This is due to the combination of the flavours.
- Toast the melon (egusi)
- After allowing it to cool, turn into a blender, add some water and blend.
- Season your snails with pepper, salt and seasoning cubes
- Add water to the seasoned snails. Once it starts boiling, add your local peppersoup spice, seasoning cubes and salt (adjust to taste). Add more pepper.
