Eforiro is a vegetable soup of the Yoruba tribe of the south west Nigeria. The commonly used vegetable used are the shoko leaves or green leaves.
- In your blender go in with your bell pepper( tatashe), scotch bonnet and onions and blend roughly
- this is how it should look roughly blended
- In your pot or pan go in with your palm oil
- Add iru ad stir for 2 minutes
- Now introduce your roughly blended peppers
- fry for 5 miunutes on medium heat
- go in with your properly washed kpomo (cowskin), we want the kpomo to cook with the peppers till it is ready, this takes about 15 -20minutes. also we don't want our pepper to be tangy.
- add seasoning, thyme and some salt
- mix very well and allow to cook till you see the palm oil floating like this.
- By this time your shoko or green leaves are properly washed and cut. add the vegetable in 2 stages
- Add the first stage and mix
- The add the second stage and mix. you ca add dry fish, fried protein etc.
- allow to cook for 3 minute ad your eforiro is ready.
- serve with some yams.
